Vanilla Ice Cream
An easy to make, creamy and smooth ice cream
Ingredients
- 250 ml double cream
- 150 ml skimmed milk
- 100 ml water
- 70 g granulated sugar
- 3 egg yolks
- vanilla essence to taste
Instructions
Preparatory Tasks
- Put the cream into a small bowl/jug
- Put the egg yolks in a large bowl
- Put the sugar and water in a saucepan
Sugar syrup
- Boil the sugar and water for 5 minutes to make a syrup
Mixing
- Lightly whip the cream
- Add the sugar/water syrup to the eggs while whisking continuously
- Add the vanilla essence to the egg/syrup mix and whisk until it leaves a trail
- Add the milk to the lightly whipped cream
- Combine the cream/milk with the egg/syrup mix
Freezing
- Put the mixture in a suitable container and partially freeze
- Remove from freezer when half frozen and beat it again
- Return the container to the freezer
