Easy bread (mixer)

Basic bread with a mixer

A quick and easy bread recipe which I use with a mixer and manage to get very presentable (and fairly predictable) results every time!

Ingredients

  • 500 g Strong White Bread Flour
  • 5 ml / 1 tsp salt
  • 10 ml / 2 tsp dried yeast
  • 15 ml / 3 tsp sugar
  • 60 ml of olive oil
  • 300 ml warm water 1 part boiling, 2 parts cold

Instructions

  • Add the dry ingredients to the mixer bowl
  • Mix lightly for a minute or two
  • Switch to the dough hook
  • Run the mixer on a slow and steady setting
  • Slowly add about a third of the water around the edge of the bowl
  • Add all of the oil and another third of the water (again around the edge)
  • Depending on the mixture add more water until it is just moist
  • Leave the mixer running to knead for 5-6 mins
  • Lightly oil a bowl which is more than twice the size of the dough
  • Place the dough in the bowl, cover with cling film and elave to double in size (at least 1 hour)
  • Knock back the dough and put back in the mixer for 2-3 minutes
  • Put the dough in a greased loaf tin and leave to rise for another 40-45 minutes
  • When the dough rises past the top of the tin, cut a slash in the top and dust with flour
  • Place in the middle of a preheated oven at 210°C (fan oven)
  • Bake for around 30-40 mins
  • Check progress after 30 minutes (tap the bottom of the loaf, if it sounds hollow it;s done)
  • Remove from oven and turn onto wire tray.to cool
