Banana Cake
A really tasty banana cake which is a great way to use up any overripe bananas

Ingredients
- 2 ripe bananas (ideally overripe)
- 170g self-raising flour
- 170g caster sugar
- 170g soft margarine
- 3 eggs
- Few drops of vanilla essence (optional)
Instructions
Preparatory tasks
- Preheat the oven to 160 C
- Line a loaf tin with greaseproof paper
- Thoroughly mash the bananas
- Place all the ingredients in a mixing bowl
- Mix to a smooth consistency
Baking
- Pour the mixture into the prepared baking tin
- Allow it to settle for a minute
- Bake for 60 minutes (until an inserted skewer comes out clean)
- Remove from oven and leave to cool on a wire rack
