Vanilla Ice Cream
An easy to make, creamy and smooth ice cream

  • 250ml double cream
  • 150ml skimmed milk
  • 100ml water
  • 70g granulated sugar
  • 3 egg yolks
  • vanilla essence (to taste)
Preparatory Tasks
  1. Put the cream into a small bowl/jug
  2. Put the egg yolks in a large bowl
  3. Put the sugar and water in a saucepan
Sugar syrup
  1. Boil the sugar and water for 5 minutes to make a syrup
  1. Lightly whip the cream
  2. Add the sugar/water syrup to the eggs while whisking continuously
  3. Add the vanilla essence to the egg/syrup mix and whisk until it leaves a trail
  4. Add the milk to the lightly whipped cream
  5. Combine the cream/milk with the egg/syrup mix
  1. Put the mixture in a suitable container and partially freeze
  2. Remove from freezer when half frozen and beat it again
  3. Return the container to the freezer
