A really tasty banana cake which is a great way to use up any overripe bananas
Recipe type: Cake
  • 2 ripe bananas (ideally overripe)
  • 170g self-raising flour
  • 170g caster sugar
  • 170g soft margarine
  • 3 eggs
  • Few drops of vanilla essence (optional)
Preparatory tasks
  1. Preheat the oven to 160 C
  2. Line a loaf tin with greaseproof paper
  3. Thoroughly mash the bananas
  4. Place all the ingredients in a mixing bowl
  5. Mix to a smooth consistency
  1. Pour the mixture into the prepared baking tin
  2. Allow it to settle for a minute
  3. Bake for 60 minutes (until an inserted skewer comes out clean)
  4. Remove from oven and leave to cool on a wire rack
